Ingredients
1 cup all-purpose flour
2 tablespoons of sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup buttermilk
1/4 cup milk
1 large egg
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract (optional)
Cooking spray or additional butter to grease the pan
Mel Mel
Instructions
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together the buttermilk, milk, egg, melted butter, and vanilla extract (if using).
Pour the wet ingredients into the dry ingredients and stir gently until combined. Be careful not to overmix; some lumps are fine.
Heat a griddle or nonstick skillet over medium heat. Lightly coat the surface with cooking spray or butter.
Pour 1/4 cup batter onto the griddle for each pancake. Before flipping, add small spoonfuls of Mel Mel onto the surface of the pancake and swirl with a toothpick or the back of a spoon.
Cook until bubbles form on the surface and the edges look firm, about 2 to 3 minutes.
Flip the pancakes and cook for 1-2 minutes more, or until golden brown and cooked through.
Repeat process with remaining dough, adding more cooking spray or butter as needed.
Serve the pancakes hot with an extra drizzle of Mel Mel and your favorite toppings.
Tips
Adjust the flavor by adding more or less sugar to the pancake batter.
Experiment with as much Mel Mel as you like.
